Czech Christmas Hoska
Traditional Czechoslovakian Christmas Bread. Serve with butter. Some people toast it, use jelly, or even butter and powdered sugar...depending upon local customs and family preference. It is a day-long project, but well worth the effort.
- 1 (0.6 ounce) cake compressed fresh yeast
- 1/4 cup warm water (110 degrees F/45 degrees C)
- 1/2 cup white sugar
- 1/2 cup butter
- 1 egg, beaten
- 1 teaspoon salt
- 2 cups scalded milk
- 6 cups all-purpose flour
- 1 pinch ground ginger
- 1 pinch ground mace
- 1/4 teaspoon orange zest
- 1/2 cup golden raisins
- 1/2 cup candied mixed fruit peel
- 1/2 cup blanched slivered almonds
- 1 egg yolk
- 1 tablespoon milk
- 2 tablespoons confectioners' sugar
- 1Dissolve yeast in warm water.
- 2In a large bowl, cream sugar and butter. Add beaten egg and salt. Stir in cooled milk and then the yeast. Add 1 1/2 cups sifted flour; beat into a smooth batter. Cover and let rise until light, about one hour.
- 3Stir spices and dried orange zest into the sponge. Add 4 1/2 cups of flour to make a soft dough. Place on a lightly floured board, and knead until smooth and elastic. Knead in raisins and candied peel. Put in a well oiled bowl, and turn once to coat the surface of the dough. Cover. Set aside to rise until double in bulk, about 2 hours.
- 4Divide dough into ten parts, roll into desired lengths, and let rise about 15 minutes.
- 5On a heavily greased baking sheet, make a braid of three parts, beginning in the center and working braid loosely toward each end. Pinch ends together. Twist the remaining two pieces together, and place on the base of the braid. In a small bowl, beat together egg yolk and milk; brush the loaf with this mixture. Sprinkle sliced almonds over the loaf. Repeat process for second loaf. Let rise about 45 minutes.
- 6Bake at 350 degrees F (175 degrees C) for 45 minutes. Transfer bread to a wire rack, and cool completely. Cover while cooling with a tea towel to make a soft crust. Sprinkle with confectioners' sugar.
Dotted with raisins, candied cherries, nuts and citron, this spicy, sweet yeast bread makes a pretty holiday party offering.
This fruity, yeast bread is very addictive. It is good for breakfast, tea time, and after dinner snacks.

This is a Swedish cardamom bread adorned with candied cherries, citron and golden raisins.
These are wheat free, dairy free, low sugar, low fat muffins and you'd never know it. Sucant is dried can juice. It can be found in health food stores. If you don't eat them in the first two days, freeze them. Thaw in microwave for 30 seconds apiece and they will taste freshly baked.
Bread bowls from frozen bread dough. These are great. Serve these with a salad or a very thick soup.
A light, high volume bread machine bread. It works well when you use the Dough selection, and allow the bread to rise in a bread pan.

There are many, fancy variations on this basic recipe. This recipe works with many types of bread - white, whole wheat, cinnamon-raisin, Italian or French. Serve hot with butter or margarine and maple syrup.

This is a sprouted bread recipe - very old, and said to have been created back in the biblical days. Also, this recipe literally, takes days to make. Your efforts and time will be well rewarded with a couple of the most singular breads-solid, sweet, and moist. Wheat berries are available from your local natural foods store. Traditionally, Essene bread was probably baked on hot rocks under scorching sunlight, but where I and most of us live, this is not possible. Baking at the oven temperatures which I suggest might destroy the sprout enzymes, but monitoring baking loaves for much longer than 2 hours is too long for me. Guaranteeing the preservation of the enzymes might require baking at a very low temperature for perhaps 4 hours. If you have the stamina, then go for it.
A delicious whole grain bread. It is my favorite bread of all time! It is for bread makers. You may substitute vegetable oil for flaxseed oil if flaxseed oil is unavailable.
