Mama D's Italian Bread
This is a basic delicious Italian bread.
- 3 cups warm water (110 degrees F/45 degrees C)
- 1 teaspoon white sugar
- 1 tablespoon active dry yeast
- 1 tablespoon salt
- 7 cups all-purpose flour
- 1Add the sugar and yeast to the warm water and let proof.
- 2Stir in 4 cups of flour and beat until smooth. Cover and let rest for 15 minutes.
- 3Beat in the salt and then add enough remaining flour to make a stiff dough. Knead until as soft and smooth as a bambino's behind. Turn in a greased bowl, cover, and let double in size. (I put it in the oven with the light on - perfect rising temperature.)
- 4Once doubled, punch down and divide into three. Place back in the bowl, cover, and let rise.
- 5Once doubled again, punch down and form into three fat "footballs." Grease heavy cookie sheets and sprinkle with corn meal. Place the bread on the sheets, cover with a towel, and let rise.
- 6Once risen, mist with water and place in a preheated 450 degrees F (230 degrees C) oven. Mist loaves with water and turn occasionally while they bake. Bread is done when golden brown and sounds hollow when tapped on the bottom.
This bread can be frozen and is very easy to make.
An easy to make batter bread it's also called Sally Lunn Bread.
One of our Christmas breakfast traditions - we make cherry, apricot and blueberry.
THIS IS NOT AN EASY BREAD TO MAKE! It is tricky, but worth the effort for one who loves that very different, pungent smell of salt-rising bread. The cornmeal used for the starter must contain the inner germ of the corn and a constant warm temperature must be maintained.
A nice texture and flavor, great with any Italian food. Grill with a little butter and garlic for garlic bread.
I adapted this for a bread machine from an old recipe. We always have these on Easter morning.
Pumpkin Bread, a tried and true recipe. I usually make it without the raisins and walnuts, and I get tons of compliments!
This is the 'traditional' ponczki made by most Polish Grandmothers, like mine. These take time and patience, but the product is worth it. Preferred, traditional frying method is with lard but oil will work fine. I usually mix equal portions. Grandma used a large paper bag, and dropped them in immediately after removing from the fryer. The bag absorbs a lot of the oil. Then, she transferred them to another clean bag, added her choice of coating, and shook the bag.
This recipe was given to my mom from our neighbor. The bread is so sweet and delicious! It's still very scrumptious if you choose not to use the glaze. They are the BEST GUARANTEED!
