  • 1/2 cup margarine
  • 3/4 cup white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 (10 ounce) jar maraschino cherries, drained and chopped
  • 1 cup chopped pecans

Steps

  1. 1Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 inch loaf pan.
  2. 2In a large bowl, cream butter or margarine and sugar together. Add eggs, and continue mixing until light and fluffy. Add baking soda, salt, and vanilla; mix thoroughly. Alternately add buttermilk and flour to the creamed mixture, mixing only enough to hold ingredients together. Fold in cherries and nuts, mixing lightly. Turn batter into prepared pan.
  3. 3Bake for 50 to 60 minutes, or until bread tests done. Cool completely before slicing.

Favorite Banana Blueberry Quick Bread

This is so good and reminds me of a real moist kind of a sweet quick bread. Everybody asks for the recipe: this bread is moist, and easy to make too. Note: If you are using frozen blueberries, you can thaw them in the microwave for about 3 minutes. However, you need to increase the amount of blueberries to 3/4 cup.

Nut and Fruit Bread

This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

Apricot Nut Bread

Almonds, hazelnuts or cashews would work particularly well with the apricot halves in this delicious bread.
